OUR PHILOSOPHY
At l'escargot bleu we, as a family, have given lots of thought to our food and now more than ever we are only welcoming the best ingredients into our kitchen. Ingredients that respect the farmer's ethos, the grower’s philosophy, the fisherman's respect for the ocean and the cheesemaker’s traditional recipe.
We offer a blackboard ‘bistro-style’ menu that evolves in response to feedback and demand, placing emphasis on quality and the seasons.
As we move ever closer to complete self-sufficiency in vegetables and herbs grown at our garden, we continue to source ingredients from Scotland and France, always purchasing the very best we can find.

We are the first restaurant in the UK to be certified by Pasture for Life, who support and promote producers of 100% pasture-fed beef, lamb and dairy.
By choosing meat raised purely on pasture, we know it’s of a much higher quality and it tastes better. Pasture for Life farms not only treat animals well, they put goodness back into soils rather than depleting them, encouraging more wildlife.

L’escargot bleu was awarded ‘Best Newcomer of the Year' in The List Eating & Drinking Guide, features in the Michelin guide every year, has held one AA Rosette since 2013, is in The Good Food Guide, and is listed in the ‘Five Best Restaurants in Scotland’ by Pete Irvine, to name a few.
Our chef patron Fred Berkmiller was awarded 'Chef of the Year' at the CIS Excellence Awards 2019, named a 'Food Pioneer' at the Scotland Food & Drink Excellence Awards 2016 and has won Scotland Food and Drink Excellence Award 2017 on Scottish Sourcing. In 2019 and 2021, l’escargot bleu was named ‘Best Restaurant in Scotland’ at the Slow Food UK Awards.
